Anima Verde

Agrituismo Brocca apart of a farmstay is also an organic farm with more than 1’500 olive trees.

With Anima Verde we produce a first-class extra virgin olive oil. Our main olive grove is situated on the Trasimeno hills facing the Etruscan village of Cortona. A stunning place with a magic view.

Our olive oil Anima Verde is of intense green colour and pronounced flavour. Thanks to the good quality, these characteristics remain throughout the year. This all depends on the early time of harvesting and on the type of olive trees composing the grove. 

We always pick in October, when the olives are not ripe yet. This gives the oil the characteristic green colour made by chlorophyll and the intense flavour given by polyphenols.

Our trees are of different varieties (Leccino, Frantoio and Moraiolo) which blended together make the unique Anima Verde.

The pressing of the olives on the day of harvest in the mill specifically certified for organic olive oils contributes to an excellent result. Cold pressed and natural, Anima Verde is of intense green colour and pronounced flavour. Anima Verde tastes particularly good on the bruschetta and refines many raw and cooked dishes.

By hand

For the quality of the olive oil

We harvest our olives mainly by hand with the support of light machinery. This helps us pick good quantities each day preserving the health of the trees and the fruit. This is immensely important fot the tree’s health and the quality of the olive oil.   

We put nets under the trees. With mechanical harvesters we shake the fruits off and they fall on the nets. There they are cleaned from leaves and sticks and then put into boxes which go to the olive mill the same day. Milling the olives the same day of the harvest is of crucial importance to preserve the quality of the olives. In order to get an organic Olio extravergine di oliva it is mandatory to choose a certified olive mill with clean machinery. Only like this one can be sure not to contaminate the olives with products not allowed by the organic protocol.
